Evelyn H. Probst, 101, of O’Fallon, formerly of Ramsey, died Thursday, April 18, 2024, after a short stay at Clinton Manor Living Center in New Baden.
Services will be held on Saturday, April 27, at the First Church of God in Vandalia. Visitation will be held from 9:30 a.m. until the service time at 11 a.m. with the Rev. Zach Schaeffer and Pastor Charles Miller officiating. Burial will follow at Glendale Cemetery in Fillmore.
Mrs. Probst was born June 5, 1922, in Shafter Township, the daughter of Albert and Minnie Henrietta (Kresin) Hoffman. She married John Earl Probst on Jan. 22, 1942, in Troy, MO. He preceded her in death on June 27, 2000. Mrs. Probst was a homemaker as well as fulfilling the many tasks required of a farmer’s wife. They lived and raised their family in rural Bingham until they moved to Ramsey in­­­­ 1996. She had resided with her daughter Gail in O’Fallon for the last six years.
Mrs. Probst loved spending time with her family and many dear friends. She enjoyed Home Extension (now HCE Home and Community Education) for over 80 years and was honored to give a speech at Fayette County HEA anniversary celebration last summer.
Mrs. Probst enjoyed cooking and was known for her noodles, sharing helpful hints, gardening and sewing. It was said that people of Ramsey would drive by her house just to see her flowers. She was known for her sharp mind and quick wit that continued until the very end of her journey here on earth. When someone commented on how nice she looked she would reply with her sweet smile “a little powder and a little paint, makes a girl, what she ain’t.” She was a long-time active member of the Canaan Chapel Church of God, rural Bingham, then First Church of God, Vandalia. Her deep faith sustained her, and her sweet spirit was a constant witness to others. She loved well and was well loved.
Mrs. Probst is survived by her son, Gary (Connie) Probst of Vandalia and daughters Connie Weller of Cottage Hills and Gail Greer of O’Fallon; eight grandchildren; 14 great-grandchildren; three great-great-grandchildren and two on the way; and sister-in-law Arlene Hoffman of Vandalia.
She was preceded in death by her parents; husband; brother Wendell Hoffman; sister May Della Probst; and brother-in-law Paul Probst.
Memorials may be made to First Church of God in Vandalia and/or Ramsey High School Home Economics Department (a part of the FACS Family and Consumer Science Department) or the charity of donor’s choice.
